Kale Soup

Ingredients:
2 pcs. Beef shanks
1 lb. Chourico cut into small pieces
1 lb. linguica cut into small pieces
1 Large Onion chopped
2 cans Red kidney beans, rinsed and drained
2 cans White kidney beans, rinsed and drained
6 medium potatoes cut into small pieces
2 Packages chopped frozen Kale
3 handfuls dilate pasta
Salt and Pepper to taste
Directions:
In a 8 -10 qt pan, place shanks,chourico, linguica and onion in pan
Cover with water, Bring to boil then simmer 1 to 2 hrs remove beef shanks cut into small pieces return to pan add Beans, Potatoes, pasta and Kale. Simmer another 1-2 hours.

As a child, I remember my grandmother (dad's mom) sending chourico in the winter to us in New Jersey from Fall River (Tremont St.). We would anticipate the package arriving as soon as the cold began to set in. She use to get it from a butcher shop around the corner from where she lived. My mother use to tell her, "send me the hottest they have." When it arrived the first thing she would do is make soup (gradmother's recipe). Her recipe was different. It contained the kale, cabbage, carrots, chicken stock, and potatoes. After grandmother died, ,mother called my aunt, who told her about Furtados. Mom would call every year and place an order. After we children grew and moved out, she would call all of us and place orders for us. Mom has since died, but every now and then, one of us goes on line and orders for us all.
